{"id":10,"date":"2020-05-05T19:57:34","date_gmt":"2020-05-05T19:57:34","guid":{"rendered":"https:\/\/sccattle.org\/wp\/?p=10"},"modified":"2020-05-05T20:05:19","modified_gmt":"2020-05-05T20:05:19","slug":"maple-glazed-rib-roast-with-roasted-acorn-squash","status":"publish","type":"post","link":"https:\/\/sccattle.org\/wp\/maple-glazed-rib-roast-with-roasted-acorn-squash\/","title":{"rendered":"Maple-Glazed Rib Roast with Roasted Acorn Squash"},"content":{"rendered":"\n<p>Total Recipe Time: 3 hours and 45 minutes<br>Makes 10 servings<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 beef Rib Roast Bone-In (2 to 4 ribs), small end, chine (back) bone removed (6 to 8 pounds)<\/li><li>\u00bd cup pure maple syrup<\/li><li>1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves<\/li><li>2 cloves garlic, minced<\/li><li>2 medium acorn squash, cut lengthwise in half, seeded<\/li><li>Salt and pepper<\/li><\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<p>1. Preheat oven to 350 \u00b0 F. Combine maple syrup, thyme and&nbsp;garlic in medium bowl. Reserve \u00bc cup for squash. Brush half c remaining syrup mixture onto all surfaces of beef roast. Reser remaining for basting.<br><br>2. Place roast, fat-side up, in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest paI of beef, not resting in fat or touching bone. Do not add wate or cover. Roast in 350\u00b0F oven 2\u00bc to 2\u00bd hours for medium rarE 2\u00bd to 3 hours for medium doneness, basting with syrup mixtu halfway through roasting time.<br><br>3. Meanwhile, place squash, cut sides up, in 13&#215;9-inch glass baking dish. Brush cut sides of squash with some reserved syrup mixture; evenly pour remaining mixture into each well. Roast, uncovered, 45 minutes; brushing cut sides with syrup mixture from wells, halfway !hrough baking time.<br><br>4. Remove roast when meat thermometer registers 135\u00b0 F for medium rare; 145\u00b0 F for medium doneness. Transfer roast to carving board; tent loosely with aluminum foil. Let stand 15 to 20 minutes. (Temperature will continue to rise about 10\u00b0-15\u00b0 F to reach 145\u00b0 F for medium rare; 160\u00b0 F for medium.) Meanwhile, increase oven temperature to 425\u00b0 F and contim to roast squash 15 to 20 minutes or until tender and edges begin to brown.<\/p>\n\n\n\n<p>5. Carve roast into slices. Cut each squash half into 2 wedges, carefully spooning syrup mixture onto each wedge.
